It comes from a mix of soils, dominated by Loess over chalk and granite. The grapes are from a mixture of estate vineyards, farmed organically. It has great weight and texture, more body than most liters and so makes an interesting comparison with the bright, snappy Etz liter. It is vinified in steel with his own yeast culture, developed over many years. Notes of fava and fresh green bean, a hint of creaminess.
